The coffyn
Early pies were baked in a thick, hand-raised pastry case called a coffyn, an old word for a basket or box. The crust was the cooking pot and the storage, not always something to eat.
Yorkshire Christmas pie
A Georgian showpiece: birds boned and packed one inside another, from pigeon to turkey, in a sturdy raised crust. Hannah Glasse printed a recipe in 1747.
Goose pies
Yorkshire goose pies were built to travel, with crusts strong enough to be sent south as Christmas presents.
Wigan's championship
Wigan hosts the World Pie Eating Championship, where the challenge is to eat a single meat and potato pie as quickly as possible.
